Ingredients
  1. ¼ cup all purpose flour
  2. ½ cup whole milk
  3. 6 large eggs
  4. ½ teaspoon salt
  5. ¼ teaspoon ground black pepper
  6. 2 tablespoons unsalted butter
  7. ¼ cup yellow onions, diced
  8. ½ cup uncooked broccoli florets, chopped into ½ in pieces
  9. ½ cup cooked red potatoes, chopped into 1/4 in cubes
  10. 1 cup Parrano®, grated
Instructions
  1. Preheat oven to 325º F
  2. Place flour in a bowl; whisk in milk then eggs; season with salt & pepper, set aside.
  3. Heat butter in a non-stick, oven safe pan over medium-high heat. Add onion and sauté for 3 minutes until translucent. Add broccoli and potatoes and sauté for another 5 minutes until all vegetables are tender and hot.
  4. Add egg mixture to pan with vegetables. Using a rubber spatula move around the eggs for a minute scraping down the sides and bottom. Turn off heat and mix Parrano® cheese into eggs and place pan into oven for 8-10 minutes. Eggs should be firm and hold their shape in the center.
  5. Remove frittata from pan and serve immediately hot or allow to cool and serve room temperature.
