Bacon Guacamole Parrano® Grilled Cheese

Kick up your traditional grilled cheese sandwich with crispy bacon, spicy guacamole, and creamy Parrano® cheese. This savory grilled cheese is perfect for both children and adults! Serve with your favorite chips and enjoy!

To make the guacamole
  1. 2 ripe avocados
  2. 1/2 small onion, minced
  3. 1 garlic clove, minced
  4. 1 small jalapeno, stems & seeds removed, minced
  5. 2 tablespoons cilantro leaves, finely chopped
  6. 1 Roma tomato, chopped
  7. 1 tablespoon fresh lime juice
  8. 1/2 teaspoon coarse salt
  9. Dash of freshly grated black pepper
To make the grilled cheese
  1. 4 slices bread of your choice
  2. 4 slices crispy bacon
  3. 1 cup shredd Parrano® cheese
  4. Butter, for buttering bread
Instructions
  1. To make the guacamole – cut avocados in half. Remove seed. Take out avocado from the peel and put in a large bowl. Mash the avocado using a fork. Add the onion, garlic, jalapeno, cilantro, lime juice, salt and pepper. Stir until well combined. Add the chopped tomato and mix.
  2. In a pan, cook 4 slices of bacon over medium heat until crispy.
  3. Remove bacon and use same pan to heat butter over medium-high heat. Butter the outer slices of bread and spread desired amount of guacamole on both slices of bread, then top with Parrano® cheese. Add the cooked slices of bacon. Flip sandwich and cook until golden brown. Make the other sandwich the exact same way and serve
