Pissaladiere with Caramelized Onions & Parrano

Ingredients
  1. 1 tsp. salt
  2. 1 tbsp. honey
  3. 2 tbsp. olive oil
  4. 3/4 cup cool water
  5. 1 package fresh or dry yeast
  6. 1/4 cup warm water
  7. 3 cups all-purpose flour
  8. 2 teaspoons of olive oil
  9. 2 medium yellow onions, roughly chopped
  10. 4 tablespoons of Tapenade (black olive spread)
  11. 2 1/2 cups Parrano®, grated
  12. 2 sprigs of thyme, chopped
To make the dough
  1. Combine salt, honey, olive oil and 3/4 cup cool water. Mix well.
  2. Dissolve yeast in the 1/4 cup warm water. Let proof for 10 minutes.
  3. In a food processor add the flour and pulse. Slowly add the salt and honey mixture to the flour. Then pour in the dissolved yeast. Process until the dough forms a ball on the blade - if too sticky add a little flour.
  4. Place in a buttered bowl - allow dough to rest for 30 minutes. When ready to use, roll dough to 1/4 inch thick.
To make the topping
  1. Preheat the oven to 400°
  2. Heat 2 teaspoons olive oil over med heat. Add onions and sauté until golden brown.
  3. Spread Tapenade (black olive spread) on the dough. Layer on sautéed onions & Parrano®. Sprinkle thyme on top and bake until golden brown about 10 minutes
